Made with fresh fruit, vegetables and cold water. The blender method keeps the pulp if you leave it unstrained; the juicer option gives a lighter finish. Choose the texture you enjoy.

You’ll need: a blender, chopping board, knife, measuring jug and optional fine sieve. The main method makes two small glasses; volume varies with the produce and added water.

Ingredients

  • 250 g fresh pineapple flesh, peeled and cut into chunks
  • 200 g cucumber, washed and roughly chopped
  • 20 ml freshly squeezed lime juice (about 1–1½ tbsp)
  • 6–8 small fresh mint leaves, washed (about 2 g)
  • 100 ml cold water, plus a splash if needed
  • Ice and a mint sprig, to serve (optional)

Blender method

  1. Prepare the fruit and herbs

Wash the cucumber and mint. Peel the pineapple, remove the eyes and tough central core, then weigh 250 g of flesh. Chop into chunks. Leave the cucumber skin on if you like and trim off the ends.

  2. Blend until smooth

Put the water, cucumber, pineapple, lime juice and mint leaves into a blender. Secure the lid and blend for 45–90 seconds until smooth. Add a small splash of water if your machine needs help; do not exceed its fill line.

  3. Adjust the texture

Taste and add a few drops more lime if you prefer it sharper. Leave the pulp in for a fuller drink, or pass through a fine sieve for a lighter, more juice-like texture. Straining changes the nutrition estimate.

  4. Serve cold

Stir and divide the full batch equally between two small glasses. Add ice and an optional mint sprig, then enjoy straight away. Natural separation is normal; give it a quick stir if it settles.

Using a juicer?

Juice the pineapple and cucumber without the 100 ml blending water. If your machine accepts herbs, sandwich the mint between pieces of cucumber; otherwise tear it into the finished drink, let it infuse briefly and remove it. Stir in the lime juice. Divide the batch into two portions; yield varies.

A few little details

Make it just how you like it.

Use ripe pineapple

It should smell pleasantly sweet at the base. Very firm, sharp pineapple makes a noticeably more acidic drink.

Go gently with mint

Start with six small leaves. Too many can overpower the pineapple, especially in a powerful blender.

Make it a cooler

Pour over ice and loosen your portion with a splash of sparkling water just before drinking. The optional water adds no energy.

Keep it fresh

Best made and enjoyed straight away. If saving a portion, refrigerate promptly in a clean sealed container at 5°C or below and use within 24 hours. Stir or shake before drinking. Homemade juice is unpasteurised.

Ingredient notes

Check all ingredients for individual allergies. Wash produce well, use clean equipment and follow your blender or juicer instructions. Keep peels, apple pips and cores out of the drink. No dairy, eggs or added sweeteners are needed.

Cuisine & estimated energy

Cuisine: International. Approximately 70 kcal per serving. One serving is half of the whole unstrained blender batch.

Approximate energy for half of the complete, unstrained blender batch, with water only and no optional garnishes. Calculated from CoFID 2021 generic produce values and rounded to the nearest 5 kcal. Straining or juicing removes pulp, so the calorie figure does not apply unchanged to those versions.

Source: CoFID 2021 food composition data. Juicer extraction varies; no fibre or calorie equivalence is claimed for strained versions.

Your questions, answered

Do I need a juicer?

No. The main recipe uses a blender and cold water. A high-speed blender handles the raw produce most smoothly. There is also a separate juicer method.

Can I keep the pulp?

Yes. The unstrained blender version keeps the pulp in the glass. Straining gives a lighter texture but removes some of the fibre. The calorie estimate applies to half of the unstrained batch.

Can I make it ahead?

Best made and enjoyed straight away. If saving a portion, refrigerate promptly in a clean sealed container at 5°C or below and use within 24 hours. Stir or shake before drinking. Homemade juice is unpasteurised.

Does it need sugar or supplements?

No. The fruit provides the sweetness and the recipe works without added sweeteners or specialist products. We have kept this collection focused on fresh produce.
