Sticky orange. Warming ginger.
A very good dinner.

Golden oven-roasted chicken thighs with a glossy orange, ginger and honey glaze. Bright citrus, warming ginger and plenty of sauce for spooning over dinner.

This is the kind of dinner to bring to the table in its roasting tin: golden chicken, a bright citrus glaze and a bowl of something green alongside. Fresh ginger and garlic bring depth, while a little honey gives the sauce its sticky finish.

You’ll need: a large shallow roasting tin, a small saucepan, two clean bowls and a food thermometer. Allow roughly 1 hour 10 minutes including resting; larger thighs can take longer.

Ingredients

For the chicken

  • 8 bone-in, skin-on chicken thighs (about 1.2 kg)
  • 1 tbsp olive oil
  • 1/4 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper

For the glaze

  • 150 ml freshly squeezed orange juice
  • Finely grated zest of 1 washed orange
  • 2 tbsp honey (about 40 g)
  • 2 tbsp reduced-salt soy sauce
  • 20 g fresh ginger, peeled and finely grated
  • 3 garlic cloves, finely grated
  • 1 tbsp apple cider vinegar
  • 1 tsp cornflour mixed with 1 tbsp cold water

To serve

  • 2 spring onions, finely sliced
  • Fresh coriander leaves (optional)
  • Freshly cooked rice and steamed greens, to serve (optional)

Method

  1. Start with golden chicken

Heat the oven to 200°C fan / 220°C conventional / gas 7. Pat the chicken dry with kitchen paper; do not wash it. Place skin-side up in a large shallow roasting tin, leaving space between pieces. Rub with oil, salt and pepper. Roast for 30 minutes.

  2. Make the orange & ginger glaze

Meanwhile, combine the juice, zest, honey, soy sauce, ginger, garlic and vinegar in a small pan. Simmer gently for 5 minutes. Stir the cornflour slurry again, add it and simmer for 1–2 minutes until lightly glossy. Divide between two clean bowls: one for glazing, one for serving.

  3. Glaze towards the end

After 30 minutes, spoon the glazing portion over the chicken. Roast for another 15–25 minutes, until cooked through and golden. Cover loosely with foil if the glaze darkens too quickly. Discard any glazing sauce or utensils that have touched undercooked chicken.

  4. Check, rest & serve

Check the thickest part of each thigh with a clean thermometer, away from the bone: it must reach 75°C for 30 seconds. Rest for 5 minutes. Reheat the untouched serving sauce in the pan until steaming hot. Spoon over the chicken and finish with spring onions and optional coriander. Serve with freshly cooked rice and greens.

Keep the serving sauce separate. Divide the glaze before it goes near the chicken. Use one portion for glazing and keep the other untouched for serving. Never dip a used brush or spoon back into the clean serving sauce.

A few details make the difference

Golden chicken. A glossy finish.

Give the thighs room

Use a shallow tin large enough for a single layer. Crowded chicken steams and the glaze stays watery. If needed, divide between two tins and rotate their positions.

Fresh orange makes the difference

Zest the orange before squeezing it, taking just the coloured skin. Avoid the bitter white pith. If the oranges are especially sharp, taste the clean sauce before dividing it and add a little more honey if needed.

Keep the glaze for the finish

Roast the chicken before adding the honey glaze. It gives the skin a head start and reduces the chance of burnt sugar. Watch closely during the final minutes.

Make it your kind of dinner

Add a pinch of chilli flakes to the sauce for heat. Serve with rice, tenderstem broccoli or crunchy cucumber dressed with a little lime. No special product purchase is needed.

Make a lovely plate of it

Spoon freshly cooked rice onto warm plates, add two thighs per person, then a little hot serving sauce. Tenderstem broccoli, pak choi or green beans add a fresh contrast. Finish with sliced spring onions and a few coriander leaves.

For something lighter alongside, try thinly sliced cucumber with lime juice and a pinch of salt. For extra warmth, add chilli flakes to the sauce before it simmers.

Keeping it fresh

For chicken leftovers: cool and refrigerate within 2 hours; use within 48 hours or freeze. Reheat only once, until steaming hot throughout. Store sides separately; cooked rice needs its own safe cooling and storage routine.

Your questions, answered

Can I use boneless thighs?

Yes, but they cook more quickly. Follow the pack’s cooking guidance, add the glaze towards the end, and check the thickest part reaches 75°C for 30 seconds. The timing here is for bone-in, skin-on thighs.

Can I prepare the sauce ahead?

Make the sauce up to a day ahead, cool promptly and refrigerate in a covered container. Reheat until steaming hot, then divide into separate glazing and serving portions. Keep it away from raw chicken.

Is this recipe gluten free?

Standard soy sauce usually contains wheat. Use certified gluten-free tamari and check all other ingredient labels if you need a gluten-free meal.

Why add the glaze late?

Honey and orange juice contain sugars that can catch in a hot oven. Roasting the chicken first gives it time to colour before the glaze goes on.

How do I store the leftovers?

For the chicken, cool and refrigerate within 2 hours and use within 48 hours or freeze. Reheat only once until steaming hot throughout. Store sides separately; rice has different storage guidance.
